Bread Upma / Savory Bread Saute - Instant Pot, Stove Top

Bread Upma or Savory Bread Saute is a quick and easy Indian breakfast or snack recipe. Bread upma is made using bread, a twist to a classic umpa recipe.

Ingredients
  

  • 10 slices white bread cut into small pieces
  • 1 medium onion chopped
  • 1 medium potato chopped
  • 2 small tomato chopped
  • 1 green chili optional
  • 2 tablespoon oil
  • 1 teaspoon turmeric powder
  • ½ teaspoon red chili powder as per taste
  • ¾ - 1 cup water check recipe notes
  • salt to taste

For garnish:

  • Handful of fresh cilantro

Instructions for Instant Pot Cooking:

  • Turn on Instant Pot to saute mode (high).
  • When it displays "HOT", add oil, onion, saute for 1-2 mins.
  • Add potatoes, tomatoes, green chili, turmeric powder, red chili powder, salt to taste. Saute for 2-3 mins
  • Add water. De-glaze the pot. Turn off Instant Pot. Close the IP lid, vent sealed.
  • Turn on Manual/Pressure cook mode (high), "1" mins.
  • Note: Cook time "ONE" min is not a typo!! Check recipe notes for details.
  • Let pressure release naturally, around 5 mins. Open the IP lid.
  • Turn on saute mode (high).
  • Bring the mixture to a gentle boil. Turn off IP.
  • Add bread pieces. Mix gently. Let the bread soak the flavors for 2-3 mins before serving.
  • Garnish with some fresh cilantro and serve hot. Enjoy!!

Instructions for Stove Top Cooking:

  • On a high heat, in a pot, add oil, onion, saute for 1-2 mins.
  • Add potatoes, tomatoes, green chili, turmeric powder, red chili powder, salt to taste. Saute for 2-3 mins.
  • Reduce the heat to low, cover and cook until potatoes are completely cooked. Mix occasionally.
  • Add water. De-glaze the pot.
  • Bring the mixture to a boil. Turn off heat.
  • Add bread pieces. Mix gently. Let the bread soak the flavors for 2-3 mins before serving.
  • Garnish with some fresh cilantro and serve hot. Enjoy!!

Notes

1. If you like the consistency of bread upma to be moist but not mushy, add around 1 cup of water. For more dry bread upma, use only ¾ cup or even less water.
2. For Instant Pot, cooking time is only "1" mins since, I have chopped potatoes into small pieces. Depending upon the size of the potatoes adjust the pressure cook time.
