Flattened Rice / Poha / Aloo Poha / Kanda Batata Poha

Flattened rice, commonly known as poha or chura in India, is one of the most popular breakfast consumed all over India. This makes an excellent breakfast or even a great tea-time snack.

Ingredients
  

  • 2 cup thick flattened rice
  • 1 medium onion finely chopped
  • 1 medium potato chopped into small cubes(¼ inch cube)
  • ¼ cup raw peanuts optional
  • 1 green chili finely chopped
  • 3 tablespoon oil
  • teaspoon asafoetida or hing
  • ½ teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 sprig of fresh curry leaves 10-12 curry leaves
  • 1 teaspoon turmeric powder
  • ½ teaspoon red chili powder as per taste
  • 1 teaspoon lemon juice as per taste
  • ¼ cup of water as needed
  • Salt to taste

For Garnish:

  • Handful of fresh cilantro chopped
  • Handful of fresh pomegranate seeds optional

Instructions for Stove Top Cooking:

  • In a sieve add 2 cups of thick flattened rice, wash the rice under running water for few minutes. Let water drain completely, around 10-15 min. Now, the rice is ready to use in the recipe.
  • In a kadai/wok, add oil, when the oil is hot, add raw peanuts, fry the peanuts for few minutes, until light golden brown in color. Remove and keep it aside.
  • In the same oil, add asafoetida, mustard seeds, cumin seeds, saute for a min.
  • Add onions, curry leaves saute for a min. Now add potatoes, salt to taste. Mix well, cover and turn the heat to low. Cook covered until the potatoes are cooked, around 4-5 min.
  • Add turmeric powder, red chili powder, mix well. Add flattened rice, salt to taste, mix well. Sprinkle 3-4 tablespoon of water, cover and cook for 5 min.
  • After 5 min, turn off the heat. Add fried peanuts, green chili, fresh coriander, lemon juice, mix well. Serve hot. Enjoy!

Instructions for Instant Pot Cooking:

  • In a sieve add 2 cups of thick flattened rice, wash the rice under running water for few minutes. Let water drain completely, around 10-15 min. Now, the rice is ready to use in the recipe.
  • Turn on saute mode, adjust the temperature to normal mode. When it displays HOT, add oil, add raw peanuts, fry the peanuts for few minutes, until light brown in color. Remove and keep it aside.
  • In the same oil, add asafoetida, mustard seeds, cumin seeds, saute for a min.
  • Add onions, curry leaves saute for a min. Now add potatoes, salt to taste, add ¼ cup of water. Mix well. Change the temperature to less mode, using the adjust temperature function. Cover the pot with a lid (not IP lid). Cook covered until the potatoes are cooked, around 4-5 min. Check in-between.
  • Add turmeric powder, red chili powder, mix well. Add flattened rice, salt to taste, mix well. Sprinkle 2-4 tablespoon of water, cover and cook for 3-4 min.
  • Turn off IDo not open the lid, keep it covered for 5 min. Before serving, add fried peanuts, green chili, fresh coriander, lemon juice, mix well. Serve hot. Enjoy!

Notes

  1. It's important to wash the flattened rice before use, it helps remove starch from the rice, and also helps soften the rice. I use a strainer or a sieve to wash the rice under running water, keep it aside for water to completely drain, around 10-15 min, before using it in the recipe.
  2. Choice of vegetables such as green peas, carrots, may also be added for more nutritious meal.
  3. Peanuts give a nice crunch to this dish. Nuts are optional. Nuts of choice may also be added, such as cashews, raisins.
  4. Adding handful of fresh pomegranate seeds adds a very refreshing taste to this dish.
